STABILITY OF PROBIOTIC AGENT (Lactobacillus plantarum Dad 13) IN TAPE KETAN (Oryza sativa glutinosa) DURING COLD STORAGE

ABSTRACT

Lactobacillus plantarum Dad 13 is local probiotik which suplemented to tape ketan and become a fungctional food. The purpose of this study is to know about stability of probiotic agent which suplemented in tape ketan during cold storage (40C)  for 60 days. The acidity, alcohol value, reducing sugar and pH are the quality parameter of tape ketan which is influeted by the microflora during fermentation of tape.
The fermentation of tape ketan was carried out in cold temperature (40C) for a 60 days and the bacteria cells were counted in day 1, 7, 17, 27, 37, 47 and 57. Microbial assay included lactic acid bacteria, acetic acid bacteria, yeast, Lactobacillus, and total plate count. Chemical assay included reducing sugars, ethanol, acid concentration and pH.
            The result showed a decreasing number of microbial during fermentation......
